Handmade gifts: Fluffy Homemade Mocha Marshmallows

Homemade Marshmallows are the perfect holiday gift to gift during the holiday season.
Ingredients (Makes a 10 inch square)
3 Tbsp powdered Gelatine
6 tbsp water for blooming
Syrup
2½ cups Castor sugar
1 tbsp Glucose syrup
¾ cup water
Flavour
4 tsp of instant coffee mixed in 1 tbsp of hot water
1 tsp of Vanilla extract
½ cup of Cocoa powder mixed with ½ cup of hot water
(Mix all the flavourings together in a bowl and set aside)
You will also need:
Candy thermometer | Food processor with whisk attachment | 10 inch square sided pan lined with oiled baking paper
Method
In a bowl, add the Gelatine and water. Leave aside for 10 minutes to bloom.
In the mean time, make a syrup with the sugar, water and Glucose syrup. Mix together and boil until the sugar reaches 120°C.
Warm the Gelatine for 10 seconds in a microwave until melted and runny. Place the Gelatin in a food processor with a whisk attachment. Start whipping the Gelatine. With the mixer running, slowly trickle the hot sugar syrup down the side of the mixing bowl into the Gelatine mixture. Keep whisking until the mixture starts to whiten and thicken. Now the magic begins!!! Once the mixture starts to resemble fluffy bubblegum, add 1 tbsp of the flavouring mix and whip together to incorporate.
Once mixed well, remove half the mixture into a bowl and set aside. Meanwhile in the main mixing bowl, add all the rest of the Mocha flavouring and whisk well to incorporate. Mix and swirl both parts of the marshmallows together.
……….and there you have it! Spoon the marshmallow into the prepared tin.
Allow to set for a few hours or overnight. Once set, cut the marshmallows into bars or cubes. Enjoy! Store in a sealed box.
