Keto recipes: Keto Pavlova

Chiristmas is my most favourite time of the year. The food is abundant and as are the treats! But that does not mean you can’t have some awesome Christmas treats – especially PAVLOVA. This recipe is super easy to put together….yes…about 10 minutes!!! Sugar free. Gluten free! ….and super delicious!

I am not a fan of diets as I feel there are too many restrictions and not enough things to eat. But when I found that on Keto, I could still have all my favourite foods and make the Keto lifestyle work for me, I was more than ready to take up the challenge. My biggest challenge on Keto so far has been to learn to prepare all my favourite foods with new ingredients, cutting out the sugar and carbs. I think I am winning with KETO!

Ingredients (Serves 8)                                                         
pavlova 1

5 Egg whites – room temperature

pinch of salt

½ cup Erythritol

1 tsp Lemon Juice

¼ cup Tapioca starch

2 tsp Vanilla extract



2 tbsp Erythritol

Berries of your choice


Preheat oven to 180°C. Spread a sheet of parchment paper on a baking tray. Stick the paper down with a spray of oil.

Set up the mixer bowl with a whisk attachment. In the mixer bowl, add the egg whites. Whisk on medium speed until the egg whites start to get foamy. Slowly start adding the Erythritol and Vanilla extract. Run the mixer on top speed until you get stiff peaks.

Add in the Tapioca starch and Lemon juice. Whisk on medium speed for 10 seconds. The meringue is ready.

Empty the meringue onto the prepared parchment-lined baking tray. Spread the meringue into thick 2 inch high slab or shape into a round. Place into the heated oven and immediately turn the heat down to 100°C. Bake the Pavlova for 40 minutes or until you get a crisp top. Ensure that the Pavlova does not brown. Once done, turn the oven off. Crack the door of the oven and allow the Pavlova to cool in the warm oven.


For the topping: Whisk the cream and Erythritol until thick. Spread on top of the cooled Pavlova. Top with berries.
