Handmade gifts: Black Current & cracked Pepper Jam
These gorgeous Black Currents were picked from our good friend’s garden. I was so excited to make this versatile jam/preserve. Enjoy with cheese, on buttered toast or with cream on a Pavlova. You can also use it in a tart. So easy and delicious! Gift or enjoy! A ‘must have’ in every pantry!
1 kg Black Currents
1 kg Caster sugar
¼ cup water
Juice of 1 Lemon
3 tbsp cracked black Pepper
You will also need a candy thermometer
Makes approx. 1½ kg of Jam
- Pick the stalks off the Black Currents and ensure there are no traces of twigs and leaves. Lightly crush about half the black currents.
- Place all the ingredients in a pot and bring to a boil. Mix well.
- Once the mixture starts to boil, insert the Candy thermometer. Cook until the mixture reaches 105°C or 220°F. Once done, while still hot, spoon the jam into clean, sterilised jars and seal immediately.
